When we walked into the market, the smoke form of consumed us. It was in all places. The place is known as Pasillo de Humo. Translation: Smoke Alley. It\u2019s this little alley off a market in Oaxaca, and there are distributors in all places cooking totally different meats: carnitas<\/em>, sausages, various kinds of pork and beef, recent tasajo<\/em> and cecina<\/em>. We tried the whole lot, in fact, however the spotlight was this little stall that has been women-owned and run for generations. <\/p>\n

Karla, our Intrepid chief, stated rule of thumb in Mexico is the three B\u2019s: Bueno (good), Bonito (fairly) and Barato (low cost). This place ticked all of them.<\/p>\n
