David is the founding father of Chicago-based DMK Restaurants<\/a> and is the son of restaurateur Arnie Morton, of Morton\u2019s Steakhouse, and David\u2019s brother Michael Morton is the co-founder of Morton Group, which incorporates La Cave Wine & Food Hideaway, in addition to the N9NE nightclub group in Las Vegas. Half-brother Peter Morton based the Hard Rock Hotel and Casino in Las Vegas.<\/p>\n

The\u00a0Landing<\/span><\/a> is David\u2019s first enterprise in New York City, located in newly constructed PENN1, full with comfy, trendy interiors and a scrumptious, but unfussy menu over the ten,500-square-foot, 150-seat restaurant. We sat down with David and mentioned secrets and techniques to success, developments, and extra.<\/p>\n

Tell us about your self. How did you get began?<\/strong><\/p>\n

I grew up within the restaurant business.\u00a0 My father, Arnie\u00a0Morton<\/span>, based\u00a0Morton<\/span>\u2018s Steakhouse; and my family has been operating restaurants across the country for generations.\u00a0 We started DMK Restaurants in 2009 with a desire to merge fine and casual dining.\u00a0 We wanted the quality of fine dining married to the fun of casual dining.\u00a0 Today, our portfolio spans across Chicago, Las Vegas, New York, and Virginia.<\/p>\n

What trends do you see in the culinary world right now?\u00a0\u00a0<\/strong><\/p>\n

Many trends are being driven by a post-Covid, celebratory environment.\u00a0 This translates to larger format, sharable dishes, low abv cocktails, session beers, and bubbles.\u00a0 And, meanwhile, larger trends that remain intact include clean eating, signature condiments, and eastern European flavors.\u00a0 And, as a wish, I hope that the industry continues to adopt more sustainable practices, which DMK is very committed to.<\/p>\n

What is your secret to success?<\/strong><\/p>\n

Passion.\u00a0 I truly love what I do.\u00a0 Every day I get to think about how to design experiences for our guests and staff, which is a huge gift.\u00a0 By gathering data about what guests are loving from the tens of dishes we serve across the country each day, keeps us on our toes and always pivoting.<\/p>\n

What are three courses a first-timer should order at The\u00a0Landing<\/span>? What is your go-to dish?<\/strong><\/p>\n

I love our Little Gem Salad made with grapefruit, avocado, quinoa, pistachio, and citrus vinaigrette.\u00a0 I often add fresh, grilled salmon to make it an entree.\u00a0 Otherwise, I love The Landing<\/span>\u2018s Grilled Branzino (romanesco, cauliflower, charred scallions, and arugula; and \u2013 being a\u00a0Morton<\/span> \u2013 I love our steaks, too.\u00a0 New to our menu is a Spicy Ribeye, which is so delicious.<\/p>\n

What culinary destinations are on your bucket list?<\/a>\u00a0<\/strong><\/p>\n

I found a lot of inspiration in Italy where I traveled with my family this summer.\u00a0 In addition to their well-known standards, there are a ton of new, innovative restaurants there.\u00a0 I also love to visit Berlin for general inspiration.\u00a0 From the art and music scene to seemingly endless culinary creativity,\u00a0 it\u2019s all the time a terrific go-to.\u00a0 And, lastly, I proceed to be enamored with Mexico City, which I hope to go to once more quickly.<\/p>\n<\/div>\n
